Synopsis

The book “The History of Our Food” analyzes the historical evolution of foods that form part of the human diet, showing how food has accompanied and shaped the development of societies. Through a journey spanning from prehistory to the present day, the work explains the origin, domestication, geographical spread, and cultural integration of numerous foods present in our daily diet today.

The text is organized into major food groups—vegetables, legumes, meats, fish, fruits, nuts, dairy products, grains, spices, and other products—and describes the historical trajectory of each. Each food is presented not only from its culinary perspective but also from its agricultural, cultural, and nutritional context. In this way, the book shows how many foods arose from millennia-old domestication processes, how they spread through trade or migrations, and how they were accepted or rejected by different cultures.

The work also reflects on the relationship between food and health, emphasizing that current dietary patterns are the result of a long historical and cultural experience. In contrast to contemporary dietary fads, we propose understanding food from a historical, scientific, and cultural perspective. Overall, this book is a work of popular science that connects history, nutrition, and culinary culture to help readers better understand the foods they consume and their role in human health.
